I am an individual who has been blessed with many fine experiences, granted opportunities to work with some gifted individuals, and I have enjoyed some of the most prestigious environments within which to ply my trade. I never could have planned my career path as I certainly would not have dreamt of some of the opportunities that were laid at my feet.
In my early years in the business of hospitality I was able to travel and work with some individuals that I now consider mentors. In a significant way I owe them a debt of gratitude for my most basic skill set, professional disposition, and very approach to the industry that has treated me well for the last 20 years. I do my best to satisfy this karmic debt by passing on as much of my knowledge and skills as possible to younger managers with whom I work. I endeavor always to be the window through which knowledge, enthusiasm, and skill will pass without resistance.
As my skill level grew I have been fortunate enough to take the helm of a number of organizations to which I was able to apply my philosophy of hospitality, years of experience, and personal passion. I have found no greater satisfaction than bringing a concept to fruition through dedicated effort, skill, resourcefulness, and a little luck. I am uncertain who said it first, but I certainly find it correct that: "the harder I work, the luckier I get"!
My philosophy of hospitality is a simple one. The location must be clean and inviting. Physical location is important, but there is an inverse correlation between the significance of the physical location and the quality of the experience. The entire staff must exist in a culture of sincere intent, respect, knowledge, and dedication. The environment must be a fresh and skillful representation of the best ingredients available. At the same time the experience needs to be unpretentious and approachable within its ingenuity. Finally, an establishment must provide a perception of value to its guests while maintaining financial responsibility to the members of its organization and the community within which it exists.
Eventually, when the challenges are fewer, and the learning is less often, and adventures diminish, I will seek my own establishment. Until that time I remain seeking the next adventure.
